A easy to put together breakfast dish that is best eaten on a warm day. Shoto swears by this one and I have to agree with him.
Ingredients
- 1 Bundle Buckwheat Soba Noodles
- 2oz Tsuyu Sauce
- 2ea Eggs
- 2ea Green Onions, thinly sliced
- Toasted Sesame Seeds
- Pickled Ginger
- 1t Salt
Instructions
- Add water to a medium saute pan so that the water is about 3/4 up the pan. Add a 1t of salt to the pan and bring to a boil. Once the water is at a rolling boil place your soba noodles in. Boil for 8-10 minutes or until tender. When the noodles are finished, drain the water and place the noodles into a bowl of ice water. Cool the noodles for 4-5 minutes then remove them from the water to prevent them from absorbing too much liquid. Set the noodles aside.
- Bring a medium pot of water to a boil and place your eggs in. Boil for 8 minutes then remove them from the water and place them into a bowl of ice water. Allow the eggs to cool for 10-15 minutes. Peel and rinse, set aside.
- Place the batch of noodles into your bowl of choice, garnish with lots of green onions, ginger and sesame seeds. Cut the eggs in half and place them on the soba. The tsuyu is placed in a separate dipping bowl for you to dip the noodles into. Dip the noodles, slurp them up and enjoy with the eggs.
