If you love texture, this fried rice is for you. From the tender rice to the crunch of the potato chips to the soft eggs, you won't be disappointed.
Ingredients
- 400g Day old Cooked White Rice
- 3ea Cloves Chopped Garlic
- 50g Minced white onion
- 2 egg whites, whisked lightly
- 1 egg yolk, whisked
- 1 egg yolk, Whole
- 5g Pea Sprouts, plus more for garnish.
- 15ml Sesame Oil
- 15-20ml Soy Sauce (to taste)
- Handful Potato Chips, broken up (be generous)
Instructions
- Add 30ml neutral oil to a Saute pan or Wok. Once oil is smoking add in your garlic and toast for 30 seconds then add in your onion and cook until translucent.
- Push the onions and garlic to the side, add a small amount of oil to the pan in an empty spot. Add in your egg whites and cook until soft.
- Once your egg whites are soft set, fold in with garlic and onions. Add your rice and saute for 2-3 minutes or until the rice begins to take in color.
- Add your soy sauce and Sesame oil, stir to combine. Fry for an additional 2-3 minutes and fold in your pea sprouts along with your broken up potato chips.
- Mix to combine and spoon fried rice into bowl and gently pack the rice. Turn over the bowl onto a plate. Remove the bowl and using a spoon or thumb make a small well on top of the rice.
- Place your egg yolk into the well and garnish with pea sprouts. Garnish your plate with more potato chips and enjoy!
