Demon Slayer Gyudon Bento

A Quick and easy teriyaki beef bowl, otherwise known as gyudon. Pack it to go or have it right when it's made.

Ingredients

  • 8oz Thinly sliced sirloin or steak of choice
  • 1ea Green Onion, thinly sliced
  • 2ea Whole Eggs
  • 4oz Firm Tofu, sliced to 1/4” thick
  • 1/2 White Onion, sliced to 1/4” slivers
  • 1/2C Soy Sauce
  • 1/2C Cooking Sake or 1/4C Rice vinegar with 1/4C Water
  • 1/4C Mirin
  • 2T Granulated Sugar
  • 2C Cooked Short Grain White Rice
  • Pickled Ginger
  • Bamboo Shoots

Instructions

  1. Wash your rice 2-3 times until the water runs clear. Cook the short grain rice according to the directions in your rice steamer or on the stove top. Keep warm.
  2. Bring a small pot of water to a rolling boil and place your eggs into the water. Boil for 7 minutes. While the water is boiling make an ice bath in a bowl big enough to place the eggs in. After 7 minutes carefully remove the eggs and place into the ice bath. Allow them to cool while you finish the rest of the bento.
  3. In a medium pan add 1T of cooking oil and sear the tofu on one side, about 4-5 minutes. Flip and sear the opposite side. Remove from the pan and let the tofu rest on a plate.
  4. Combine the soy sauce, mirin, sake and sugar into a large saute pan and heat over a medium heat. Stir the sauce so that the sugar does not stick to the bottom. After the sugar has fully dissolved and the sauce is simmering place in the sliced white onion. Cook the onions for 2-3 minutes or until slightly tender, they should not be completely soft. Add the sliced beef and cook for 3-4 minutes. The beef will not take very long to cook so be prepared to remove it if it seems like it is fully cooked.
  5. Remove the beef and onions from the sauce and place onto a separate bowl or plate. Reduce the remaining sauce until it has reduced by half and has thickened slightly. Remove the sauce from the heat.
  6. In your bowl of choice place in your cooked rice (as much as you like!), followed by the beef and onions, the tofu to the side of the beef, drizzle the reduced sauce on top and garnish with pickled ginger and 1 whole egg.
